Grilled Asparagus Caesar is a fresh twist on the classic Caesar salad, featuring smoky asparagus, crisp romaine, croutons, and creamy Caesar dressing.
Ingredients
1 lb (450g) asparagus, trimmed
4 cups romaine lettuce, chopped
1/2 cup croutons
1/4 cup Parmesan cheese, shaved
3 tablespoons olive oil
Salt and pepper, to taste
For the dressing:
1/4 cup mayonnaise
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
2 tablespoons grated Parmesan
Salt and pepper, to taste
Instructions
1. Preheat a grill or grill pan to medium-high heat.
2. Toss asparagus with olive oil, salt, and pepper.
3. Grill asparagus for 4-5 minutes, turning occasionally, until tender and slightly charred.
4. Whisk together mayonnaise, lemon juice, Dijon mustard, garlic, Parmesan, salt, and pepper for dressing.
5. Combine romaine, grilled asparagus, and croutons in a large bowl.
6. Drizzle dressing over salad and toss gently to coat.
7. Top with shaved Parmesan cheese and serve immediately.
Notes
Use a grill pan indoors if outdoor grilling isn’t available.
Add cooked chicken or shrimp for a main dish.
Swap mayonnaise with Greek yogurt for lighter dressing.
Sprinkle red pepper flakes for subtle kick.
