Ingredients
1 lb fresh green beans, trimmed
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
3 tablespoons olive oil
2 tablespoons vinegar
1 teaspoon Dijon mustard
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Blanch green beans 2–3 minutes and rinse under cold water
2. Whisk together olive oil, vinegar, Dijon mustard, salt, and pepper
3. Add green beans, cherry tomatoes, and red onion; toss to coat
4. Garnish with fresh parsley if desired
5. Chill 30 minutes before serving
