Ingredients
1 ½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
¾ cup granulated sugar
¾ cup plain yogurt
½ cup vegetable oil
3 large eggs
2 teaspoons vanilla extract
Zest of 1 large grapefruit
2 tablespoons fresh grapefruit juice
1 cup powdered sugar (optional)
2 tablespoons grapefruit juice (optional) for glaze
Instructions
1. Preheat oven and prepare pan
2. Whisk flour baking powder and salt
3. Beat sugar yogurt and oil
4. Add eggs one at a time
5. Stir in vanilla zest and juice
6. Fold in dry ingredients
7. Pour batter into pan
8. Bake 35-40 minutes
9. Cool and optionally drizzle glaze
