Description

Bright, creamy, and healthy golden beet dip, perfect as an appetizer or snack for any occasion.


Ingredients

Scale

2 medium golden beets, roasted and peeled

1 cup cooked chickpeas

2 tablespoons tahini

2 tablespoons olive oil

1 garlic clove

Juice of 1 lemon

½ teaspoon ground cumin

Salt and pepper to taste

Fresh herbs for garnish (optional)


Instructions

1. Roast golden beets at 400°F (200°C) for 30–40 minutes until tender. Let cool and peel.

2. In a food processor, combine roasted beets, chickpeas, tahini, olive oil, garlic, lemon juice, and cumin.

3. Blend until smooth and creamy. Add water or olive oil if needed for desired consistency.

4. Season with salt and pepper to taste.

5. Transfer to a serving bowl and garnish with fresh herbs or a drizzle of olive oil.

6. Serve with crackers, pita, or fresh vegetables.

Notes

Add smoked paprika or cayenne for subtle heat.

Replace chickpeas with cannellini beans for a milder flavor.

Garnish with toasted seeds or nuts for crunch.
