2 teaspoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

3 tablespoons unsalted butter

4 garlic cloves, minced

1 lb baby potatoes, halved

1 teaspoon fresh rosemary

1 teaspoon fresh thyme

Salt and pepper to taste

Fresh parsley for garnish

Instructions

1. Toss steak with olive oil, salt, pepper, and paprika; let sit 10 minutes.

2. Heat 2 tbsp butter in a skillet; sear steak 2–3 min per side; remove and set aside.

3. Add remaining butter and sauté garlic until fragrant.

4. Add potatoes, season with salt, pepper, rosemary, thyme; cook 12–15 min until golden.

5. Return steak to skillet; toss gently; cook 2–3 min to combine flavors.
