Ingredients
4 boneless, skinless chicken breasts
1 cup mushrooms, finely chopped
3 tablespoons butter
3 cloves garlic, minced
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley, chopped, for garnish
Instructions
1. Preheat oven to 375°F (190°C). Grease a baking dish.
2. Melt butter in a skillet over medium heat. Sauté garlic for 1 minute.
3. Add mushrooms, thyme, salt, and pepper. Cook 5-7 minutes until soft. Cool slightly.
4. Cut a pocket in each chicken breast. Stuff with mushroom mixture and mozzarella. Sprinkle Parmesan on top.
5. Rub chicken with olive oil, paprika, salt, and pepper. Sear 2-3 minutes per side until golden.
6. Transfer to baking dish. Bake 20-25 minutes until internal temperature reaches 165°F (74°C).
7. Garnish with parsley and serve immediately.
