Ingredients
2 lbs beef stew meat, cubed
1.5 lbs baby potatoes, halved
3 tablespoons butter, melted
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish
Instructions
1. In a large bowl, toss beef cubes with olive oil, paprika, thyme, salt, and pepper.
2. Place beef in the slow cooker and arrange potatoes around the meat.
3. Mix melted butter and minced garlic, then pour over beef and potatoes.
4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until beef is tender and potatoes are cooked through.
