Description
French Onion Pot Roast features tender beef slowly cooked with caramelized onions, garlic, and rich beef broth. This comforting, flavor-packed dish is perfect for family dinners or cozy weeknights.
Ingredients
3–4 lb beef chuck roast
Salt and pepper to taste
2 tbsp olive oil
4 large onions, thinly sliced
4 cloves garlic, minced
2 cups beef broth
1 cup dry white wine (optional, or substitute with extra broth)
2 tbsp Worcestershire sauce
2 tsp dried thyme
2 tsp dried rosemary
1–2 bay leaves
2 tbsp cornstarch (optional, for thickening gravy)
Fresh parsley for garnish
Instructions
1. Pat roast dry and season generously with salt and pepper.
2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown roast on all sides, 4-5 minutes per side, then remove.
3. Add onions to the same pot and cook 10-12 minutes until golden and soft. Add garlic and cook 1 more minute.
4. Deglaze with wine or a splash of beef broth, scraping up browned bits.
5. Return roast to the pot and add beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves. Cover halfway with liquid.
6. Cover and simmer on low for 3-4 hours (stovetop) or 6-8 hours in slow cooker until tender.
7. Remove roast and onions. Mix cornstarch with water and stir into liquid to thicken if desired.
8. Slice or shred roast, serve topped with onions and gravy, garnish with fresh parsley.
Notes
Add root vegetables like carrots and potatoes for a one-pot meal.
Use brisket or round roast if chuck is unavailable.
Skip wine and replace with additional broth if preferred.
Reduce liquid over medium heat for a thicker gravy without cornstarch.
