Description

Ingredients

2 tablespoons fresh orange juice

1 small garlic clove, minced

Salt and pepper, to taste

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh chives (optional)


Instructions

1. Peel and shred the carrots using a grater or food processor.

2. In a small bowl, whisk together orange juice, lemon juice, olive oil, honey, Dijon mustard, and minced garlic.

3. Season the dressing with salt and pepper to taste.

4. Pour the dressing over the shredded carrots.

6. Add chopped parsley and chives, and toss again.

7. Let the salad sit for 10–15 minutes before serving.
