Description
These Yorkshire Puddings are light, airy, and perfectly crisp on the outside while soft on the inside. A classic British side, ideal for roast dinners and special occasions.
Ingredients
1 cup all-purpose flour
1 cup milk (or plant-based milk)
3 large eggs
½ teaspoon salt
2 tablespoons vegetable oil or beef drippings
Instructions
1. Preheat the oven to 425°F (220°C). Place a 12-cup muffin tin in the oven with ½ teaspoon oil in each cup to heat.
2. In a bowl, whisk together flour and salt. Add eggs and milk gradually, whisking until smooth and lump-free.
3. Let the batter sit at room temperature for 15–20 minutes to relax the gluten.
4. Carefully remove the hot muffin tin from the oven. Each cup should have sizzling oil.
5. Pour the batter evenly into each cup, filling about ⅔ full.
6. Bake for 20–25 minutes without opening the oven door, until puffed, golden, and crispy.
7. Serve immediately with your roast or gravy.
Notes
Ensure oil is very hot before adding batter for maximum rise.
Use beef drippings for richer, traditional flavor.
Do not open the oven door during baking to prevent collapsing.
