Description
Classic flapper pie with smooth vanilla custard and fluffy marshmallow meringue. A vintage Canadian dessert.
Ingredients
1 baked 9-inch pie crust
2 cups whole milk
½ cup granulated sugar
3 tablespoons cornstarch
¼ teaspoon salt
3 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
3 large egg whites
½ cup granulated sugar
½ teaspoon cream of tartar
1 cup mini marshmallows
Instructions
1. Warm the milk gently.
2. Whisk sugar, cornstarch, salt, and egg yolks.
3. Temper with milk and return to heat.
4. Cook until thickened.
5. Stir in butter and vanilla.
6. Fill crust with custard.
7. Whip egg whites with cream of tartar.
8. Add sugar and fold in marshmallows.
9. Spread meringue and bake until golden.
Notes
Stir custard constantly.
Cool slightly before topping.
Do not freeze.
