Description

Empire Cookies with a sweet icing topping are buttery, jam-filled cookies perfect for holidays, gifts, or cozy tea time.


Ingredients

Scale

1 cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 ¼ cups all-purpose flour

¼ teaspoon salt

½ teaspoon baking powder

½ cup raspberry or apricot jam

1 cup powdered sugar

23 tablespoons milk

½ teaspoon vanilla extract (for icing)


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheet.

2. Cream butter and sugar until fluffy.

3. Beat in egg and vanilla.

4. Whisk flour, salt, baking powder; mix into wet ingredients.

5. Roll dough into balls, place on sheet.

6. Make indentation in center, fill with jam.

7. Bake 12–15 minutes until edges golden.

8. Cool completely, whisk icing ingredients, drizzle over cookies.

Notes

Use any jam flavor.

Add sprinkles over icing for decoration.

Ensure cookies are cooled before icing.
