Ingredients
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1 1/2 cups eggnog
1/4 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
1. Preheat waffle iron according to manufacturer’s instructions.
2. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In another bowl, beat eggs and stir in eggnog, milk, melted butter, and vanilla extract until combined.
4. Pour wet ingredients into dry ingredients and fold gently until just combined; batter may be slightly lumpy.
5. Spray waffle iron with nonstick cooking spray or brush with butter.
6. Pour batter onto preheated waffle iron and cook until golden brown and crisp.
7. Repeat with remaining batter. Serve immediately or keep warm in a low oven.
