Description

Duchess Potatoes are an elegant French side dish made with buttery mashed potatoes, piped into swirls and baked until golden and crisp.


Ingredients

2 pounds russet or Yukon gold potatoes, peeled and cubed

4 tablespoons unsalted butter, melted

¼ cup heavy cream

3 large egg yolks

½ teaspoon salt

¼ teaspoon black pepper

⅛ teaspoon ground nutmeg

1 egg yolk, for brushing


Instructions

1. Boil potatoes until tender, then drain and mash.

2. Stir in melted butter, cream, salt, pepper, and nutmeg.

3. Add egg yolks one at a time and mix until smooth.

4. Pipe mixture onto a parchment-lined tray.

5. Brush with egg yolk and bake at 400°F for 18–20 minutes.

Notes

Use a star tip for a classic look.

Add Parmesan for extra flavor.

Freeze unbaked potatoes for easy prep ahead.
