Description

Dandelion jelly is a sweet and floral spread made from fresh dandelion petals, sugar, and lemon juice. Perfect for toast, scones, or gifting.


Ingredients

4 cups fresh dandelion petals, washed

4 cups water

1 package (1.75 oz) powdered fruit pectin

1/4 teaspoon butter (optional)

4 cups granulated sugar

1 tablespoon lemon juice


Instructions

1. Place dandelion petals and water in a saucepan and simmer 10 minutes

2. Strain petals through a fine mesh sieve, pressing to extract juice

3. Measure 4 cups of juice and return to saucepan

4. Stir in pectin and butter, bring to a rolling boil

5. Add sugar and lemon juice, boil 1-2 minutes, stirring constantly

6. Remove from heat, skim foam, pour into sterilized jars

7. Seal jars and cool; refrigerate or process for longer storage
