Description
Garlic Parmesan Crockpot Chicken and Potatoes is an easy, hands-off dinner with tender chicken, golden potatoes, and a rich garlic Parmesan sauce. Perfect for busy weeknights or meal prep.
Ingredients
2 lbs chicken thighs or drumsticks, skin-on or skinless
1.5 lbs baby potatoes, halved
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
3 tablespoons butter, melted
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
Salt and black pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish
Instructions
1. In a large bowl, mix melted butter, garlic, Parmesan, oregano, thyme, paprika, salt, and pepper.
2. Add chicken thighs and baby potatoes to the bowl, tossing to coat everything evenly.
3. Transfer chicken and potatoes to the crockpot in a single layer. Drizzle any remaining sauce over the top.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through and potatoes are tender.
5. Optional: Broil in the oven for 2–3 minutes to crisp the chicken skin if desired.
6. Garnish with fresh parsley before serving.
Notes
Add extra vegetables like carrots or broccoli for a complete one-pot meal. For more flavor, sear chicken briefly before placing in the crockpot.
