Description

Creamy Tuscan Salmon is a rich, flavorful one-pan dish with seared salmon, garlic, spinach, sun-dried tomatoes, and a luxurious Parmesan cream sauce.


Ingredients

Scale

4 salmon fillets (6 oz each)

Salt and black pepper, to taste

2 tablespoons olive oil

2 tablespoons butter

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, sliced

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 cup chicken or vegetable broth

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

Fresh basil, for garnish


Instructions

1. Season salmon with salt and pepper.

2. Heat olive oil in a skillet; sear salmon 4–5 minutes per side. Remove and set aside.

3. In the same pan, melt butter and sauté garlic for 30 seconds.

4. Add sun-dried tomatoes and cook for 1 minute.

5. Pour in broth and heavy cream; stir and simmer.

6. Add Parmesan, spinach, and seasoning; stir until creamy.

7. Return salmon to skillet, spoon sauce over, and simmer 2–3 minutes. Garnish and serve.

Notes

Add mushrooms or roasted peppers for variation.

Use coconut milk for a dairy-free option.

Serve over pasta or mashed potatoes.
