Description

Creamy Garlic Shrimp Over Mashed Potatoes is a rich and cozy dinner made with juicy shrimp simmered in a creamy garlic sauce and served over buttery mashed potatoes. It’s easy, elegant, and perfect for family or guests.


Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 tablespoons butter

4 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 teaspoon paprika

½ teaspoon crushed red pepper flakes (optional)

Salt and black pepper, to taste

2 lbs potatoes, peeled and cubed

3 tablespoons butter

½ cup warm milk

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

1. Bring a large pot of salted water to a boil. Add potatoes and cook 15–18 minutes or until fork-tender. Drain and mash with butter, milk, salt, and pepper. Keep warm.

2. In a skillet, heat olive oil and 1 tablespoon butter over medium heat. Add shrimp, season with paprika, salt, and pepper, and cook 1–2 minutes per side. Remove shrimp and set aside.

3. In the same pan, melt remaining butter. Add garlic and sauté 30 seconds until fragrant.

4. Pour in chicken broth and heavy cream. Stir and simmer gently for 3–5 minutes until slightly thickened.

5. Add Parmesan cheese and stir until melted and creamy.

6. Return shrimp to the skillet and coat in sauce.

7. Serve shrimp and sauce over mashed potatoes. Garnish with parsley and extra Parmesan.

Notes

• Add spinach or peas to the sauce for extra flavor and color.

• Use half-and-half instead of heavy cream for a lighter version.

• Reheat leftovers gently over low heat to maintain the creamy texture.
