Creamy Dandelion Soup is a smooth and comforting soup made with fresh greens, potatoes, and creamy ingredients.
Ingredients
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups fresh dandelion greens, chopped
1 medium potato, peeled and diced
3 cups vegetable broth
1 cup milk or cream
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Heat olive oil in pot over medium heat
2. Cook onion until soft
3. Add garlic and cook until fragrant
4. Add potato and dandelion greens
5. Pour in vegetable broth and bring to boil
6. Simmer 15–20 minutes until potato is tender
7. Blend soup until smooth
8. Return to low heat and add milk or cream
9. Season with salt and pepper
10. Warm gently and serve
