Ingredients
2 tablespoons unsalted butter
1 medium onion, diced
2 cloves garlic, minced
4 cups russet potatoes, peeled and diced
3 cups vegetable broth
2 cups green cabbage, chopped
1 cup whole milk
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons green onions, chopped
Instructions
1. Melt butter in a large pot over medium heat.
2. Cook onion until soft.
3. Add garlic and stir briefly.
4. Add potatoes and broth and bring to a boil.
5. Simmer until potatoes are tender.
6. Add cabbage and cook until softened.
7. Stir in milk, cream, salt, and pepper.
8. Blend partially until creamy.
9. Simmer briefly and serve warm.
Notes
Blend fully for smooth texture.
Use Yukon gold potatoes for richer flavor.
Adjust broth for thinner soup.
