Description

Creamy Colcannon Soup with potatoes, cabbage, and a smooth buttery base inspired by classic Irish comfort food.


Ingredients

1 medium onion, diced

2 cloves garlic, minced

4 cups russet potatoes, peeled and diced

3 cups vegetable broth

2 cups green cabbage, chopped

1 cup whole milk

1/2 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons green onions, chopped


Instructions

1. Melt butter in a large pot over medium heat.

2. Cook onion until soft.

3. Add garlic and stir briefly.

4. Add potatoes and broth and bring to a boil.

5. Simmer until potatoes are tender.

6. Add cabbage and cook until softened.

7. Stir in milk, cream, salt, and pepper.
