These Creamy Cheesecake Bars are rich, smooth, and easy to make. They feature a buttery graham cracker crust and a velvety cream cheese filling, perfect for parties, holidays, or any dessert craving.
Ingredients
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
16 ounces full-fat cream cheese, softened
½ cup granulated sugar
½ cup sour cream
2 teaspoons vanilla extract
2 large eggs
¼ teaspoon salt
Optional toppings: fresh berries, caramel or chocolate drizzle, crushed cookies
Instructions
1. Preheat the oven to 350°F (175°C). Line a 9×9-inch pan with parchment.
2. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into pan and bake 8–10 minutes.
3. Beat cream cheese until smooth. Add sugar and mix until combined.
4. Add sour cream and vanilla, mix until smooth.
5. Add eggs one at a time, mix gently. Stir in salt.
6. Pour filling over crust and spread evenly. Tap pan to release air bubbles.
7. Bake 30–35 minutes until edges are set and center jiggles slightly.
8. Cool in oven 10–15 minutes, then at room temperature until fully cooled.
9. Chill in refrigerator 3–4 hours or overnight until firm.
10. Slice using a hot, sharp knife. Optional: top with berries, caramel, or chocolate.
Notes
Start with room-temperature cream cheese for smooth filling.
Avoid overmixing after adding eggs.
Line pan with parchment for easy lifting.
Let bars cool completely before refrigerating.
