Description
Creamy asparagus soup cooked in a crockpot. Easy, comforting, and perfect for a hands-off meal.
Ingredients
1 pound fresh asparagus, trimmed and chopped
1 medium onion, chopped
2 cloves garlic, minced
3 cups vegetable or chicken broth
1 medium potato, peeled and diced
½ teaspoon salt
¼ teaspoon black pepper
½ cup milk or plant-based milk
1 tablespoon olive oil
Fresh parsley for garnish
Instructions
1. Spray crockpot or grease lightly.
2. Add all ingredients except milk and parsley.
3. Cook until vegetables are tender.
4. Purée with immersion blender.
5. Stir in milk and adjust seasoning.
6. Serve warm, garnished with parsley.
Notes
Use plant-based milk for vegan version.
Adjust seasoning to taste.
Freeze in portions for convenience.
