Description

A creamy cranberry pistachio cheese log that is festive, easy to make, and perfect for holiday parties or gatherings.


Ingredients

8 oz cream cheese, softened

4 oz goat cheese, softened

½ cup dried cranberries, chopped

½ cup shelled pistachios, chopped

1 tablespoon honey

1 teaspoon vanilla extract

¼ teaspoon salt

Extra pistachios and cranberries for rolling


Instructions

1. In a large bowl, beat cream cheese and goat cheese until smooth.

2. Mix in honey, vanilla extract, and salt until well combined.

3. Fold in chopped cranberries and pistachios evenly.

4. Place mixture on plastic wrap and shape into an 8-inch log. Wrap tightly and chill 2 hours.

5. Unwrap chilled log and roll in extra chopped pistachios and cranberries.

6. Transfer to a serving platter, slice, and serve with crackers, bread, or fruit.

Notes

Make ahead by preparing the log a day in advance for easier slicing.
