This Cranberry Brie Stuffed Chicken is juicy, flavorful, and festive. Perfect for holidays or special dinners, it combines tender chicken with creamy brie and tangy cranberry sauce.
Ingredients
4 boneless, skinless chicken breasts
4 ounces brie cheese, sliced
½ cup cranberry sauce (homemade or store-bought)
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon garlic powder
Optional garnish: fresh thyme or parsley
Instructions
1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
2. Using a sharp knife, cut a pocket horizontally into each chicken breast, being careful not to slice all the way through.
3. Place a slice of brie cheese and 2 tablespoons of cranberry sauce inside each pocket. Secure with toothpicks if needed.
4. Brush chicken breasts with olive oil and sprinkle with salt, pepper, thyme, and garlic powder.
5. Place stuffed chicken in the prepared baking dish and bake for 25–30 minutes, until chicken is cooked through and cheese is melted.
6. Remove toothpicks, sprinkle with fresh thyme or parsley if desired, and serve hot.

Use thick slices of brie to prevent spilling.
Secure chicken pockets with toothpicks.
