Description
Cowboy Hash is a hearty one-skillet meal made with crispy potatoes, seasoned ground beef, peppers, and melted cheddar cheese.
Ingredients
1 pound ground beef
3 cups diced potatoes
1 tablespoon olive oil
1 small onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Heat olive oil in skillet.
2. Cook diced potatoes until golden and tender.
3. Brown ground beef and drain excess fat.
4. Add onion, peppers, and garlic and cook until softened.
5. Stir in spices.
6. Return potatoes to skillet and combine.
7. Cook until heated and slightly crispy.
8. Sprinkle cheese on top.
9. Cover and cook until cheese melts.
10. Garnish and serve hot.
Notes
Use sweet potatoes for variation.
Add beans or corn for texture.
Top with fried egg for breakfast style.
Store in fridge up to 4 days or freeze up to 2 months.
