Description
Cottage Potatoes are crispy roasted potatoes with buttery flavor and golden edges. A comforting and easy side dish for breakfast, dinner, or family meals.
Ingredients
2 lbs potatoes, peeled and diced
3 tablespoons butter, melted
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 400°F (200°C) and grease a baking sheet.
2. Peel and dice potatoes into small cubes.
3. Combine melted butter, olive oil, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
4. Add potatoes and toss until evenly coated.
5. Spread potatoes in a single layer on baking sheet.
6. Roast for 30-35 minutes, turning once, until golden and crispy.
7. Sprinkle with parsley and serve warm.
Notes
Use Yukon Gold potatoes for creamier texture.
Add shredded cheese during last 5 minutes for cheesy potatoes.
Mix in diced onions or peppers for extra flavor.
Serve with eggs or roasted meats.
Reheat in oven or air fryer to restore crispiness.
