Description
Tropical Coconut Pineapple Rice is a fragrant, sweet, and creamy side dish that pairs beautifully with grilled meats or seafood. Coconut milk and fresh pineapple give it a tropical twist.
Ingredients
1 cup long-grain white rice
1 cup coconut milk
1 cup water
1/2 teaspoon salt
1 tablespoon sugar
1 cup fresh pineapple, diced
2 tablespoons shredded coconut, toasted (optional)
Optional garnish: chopped cilantro or green onions
Instructions
1. Rinse rice under cold water until water runs clear.
2. In a medium saucepan, combine rice, coconut milk, water, salt, and sugar.
3. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
4. Remove from heat and let rice sit, covered, for 5 minutes.
5. Fluff rice with a fork and gently fold in diced pineapple.
6. Transfer to a serving bowl and sprinkle with toasted coconut if desired.
7. Garnish with chopped cilantro or green onions for added color and flavor.
Notes
Store leftover rice in an airtight container in the refrigerator for up to 3 days.
Reheat gently with a splash of water or coconut milk.
