Description

A classic Southern pecan pie with a buttery crust and rich, caramel-like filling loaded with pecans.


Ingredients

1 ½ cups all-purpose flour

½ teaspoon salt

½ cup cold unsalted butter, cubed

34 tablespoons ice water

1 cup light brown sugar

1 cup light corn syrup

3 large eggs

½ cup unsalted butter, melted

1 teaspoon vanilla extract

1 ½ cups pecan halves


Instructions

1. Preheat oven to 350°F (175°C).

2. Combine flour and salt, cut in butter, and add ice water until dough forms.

3. Roll out crust and fit into pie dish.

4. Whisk together brown sugar, corn syrup, eggs, butter, and vanilla.

5. Add pecans and pour into crust.

6. Bake 50–55 minutes until set but slightly jiggly.

7. Cool completely before slicing.

Notes

Store covered for up to 2 days at room temperature or 5 days refrigerated. Freeze for up to 2 months.
