Description
Classic Irish colcannon made with creamy mashed potatoes, tender cabbage, and butter for a comforting traditional side dish.
Ingredients
2 pounds russet potatoes, peeled and cubed
4 tablespoons unsalted butter
1 cup whole milk
2 cups green cabbage, shredded
3 green onions, sliced
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Boil potatoes until fork tender
2. Cook cabbage in butter until soft
3. Mash potatoes with warm milk
4. Fold cabbage mixture into potatoes
5. Season and serve hot
