Description
Classic French Madeleines are buttery, shell-shaped sponge cakes with golden edges and a soft center, perfect for pairing with tea or coffee.
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs, room temperature
2/3 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest (optional)
1/2 cup unsalted butter, melted and cooled
Powdered sugar for dusting (optional)
Instructions
1. Grease and lightly flour a madeleine pan, then chill it in the refrigerator.
2. Whisk together flour, baking powder, and salt in a small bowl.
3. Beat eggs and sugar on high for 3 minutes until pale and thick. Add vanilla and lemon zest.
4. Fold in the flour mixture gently, then drizzle in melted butter, mixing just until combined.
5. Cover and refrigerate batter for at least 30 minutes.
6. Preheat oven to 375°F (190°C). Spoon batter into each mold and bake for 8–10 minutes until golden.
7. Cool slightly, remove from pan, and dust with powdered sugar before serving.
Notes
Chill the batter before baking to achieve the signature hump shape.
Madeleines taste best fresh but can be stored in an airtight container for up to 2 days.
Dust with powdered sugar right before serving for the best presentation.
