Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon unsalted butter, melted
1/2 cup powdered sugar
1–2 teaspoons milk
1/4 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F and line baking sheet.
2. Cream butter and sugar until light.
3. Beat in egg and vanilla.
4. Whisk flour, baking powder, salt; add to wet mixture.
5. Roll dough into 1/4 inch rectangle.
6. Mix brown sugar, cinnamon, melted butter; spread on dough.
7. Roll dough tightly into log; slice 1/2 inch thick.
8. Place on baking sheet; bake 12–14 minutes.
9. Cool slightly; mix glaze and drizzle over cookies.
Notes
Add nuts or chocolate chips for texture.
Use whole wheat flour for a healthier option.
