Description
Soft cinnamon crumb coffee cake with a buttery streusel topping and tender vanilla cake. Perfect for breakfast or brunch.
Ingredients
Cake:
2 cups all-purpose flour
1 cup sugar
½ cup unsalted butter, softened
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Cinnamon Swirl:
⅓ cup brown sugar
2 teaspoons cinnamon
Crumb Topping:
¾ cup all-purpose flour
½ cup brown sugar
1 ½ teaspoons cinnamon
½ cup unsalted butter, melted
Instructions
1. Preheat oven to 350°F and prepare baking pan.
2. Cream butter and sugar until fluffy.
3. Add eggs, sour cream, and vanilla.
4. Mix dry ingredients separately.
5. Combine wet and dry ingredients.
6. Mix cinnamon swirl ingredients.
7. Spread half batter in pan.
8. Add cinnamon swirl.
9. Top with remaining batter.
10. Prepare crumb topping.
11. Sprinkle crumbs evenly.
12. Bake 40–45 minutes.
13. Cool before slicing.
Notes
Do not overmix batter.
Serve warm or at room temperature.
Store tightly covered.
