Ingredients
1 cup semi-sweet chocolate chips
1 cup heavy cream
1 teaspoon peppermint extract
2 tablespoons powdered sugar
1/2 cup heavy cream, whipped
2 tablespoons crushed candy canes or peppermint candies
Optional: chocolate shavings
Instructions
1. Heat 1 cup heavy cream until simmering; pour over chocolate chips; let sit 2 minutes and stir smooth.
2. Stir in peppermint extract; cool slightly.
3. Whip remaining cream with powdered sugar until soft peaks form.
4. Gently fold whipped cream into chocolate mixture.
5. Spoon mousse into serving glasses; chill 1 hour.
6. Top with whipped cream, crushed candy canes, and optional chocolate shavings.
7. Serve chilled.
