Tender chicken baked with fresh zucchini and a cheesy topping, perfect for easy weeknight dinners.
Ingredients
1 1/2 pounds boneless skinless chicken breasts, cubed
3 medium zucchinis, sliced into 1/4-inch rounds
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup heavy cream or milk
1 teaspoon dried Italian herbs (optional)
Fresh parsley for garnish (optional)
Instructions
1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. Toss chicken with olive oil, garlic powder, onion powder, salt, and pepper.
3. Arrange zucchini in the baking dish.
4. Spread seasoned chicken over zucchini.
5. Pour cream over chicken and zucchini.
6. Sprinkle mozzarella and Parmesan on top.
7. Optionally, add dried Italian herbs.
8. Bake 25-30 minutes until chicken is cooked and cheese is golden.
9. Let cool 5 minutes before serving.
10. Garnish with parsley if desired.

Swap zucchini with yellow squash or bell peppers.
Use shredded rotisserie chicken to save time.
