Tender slow cooker chicken with sweet pomegranate, crunchy walnuts, and aromatic spices, perfect for festive or family meals.
Ingredients
2 lbs chicken thighs or drumsticks, skin-on or skinless
1 medium onion, finely sliced
2 cloves garlic, minced
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon ground allspice
Salt and black pepper to taste
1/2 cup pomegranate molasses
1/4 cup chicken broth or water
1/2 cup walnuts, toasted
1/2 cup pomegranate seeds (arils)
2 tablespoons fresh parsley or cilantro, chopped
2 tablespoons olive oil
Instructions
1. Slice onion and mince garlic. Toast walnuts in a dry skillet until fragrant.
2. Pat chicken dry and season with salt, pepper, cinnamon, cumin, and allspice.
3. Optional: Sear chicken in olive oil until golden brown for extra flavor.
4. Place sliced onions and garlic in the slow cooker. Arrange chicken on top.
5. Mix pomegranate molasses with chicken broth and pour over chicken.
6. Cover and cook on low 5-6 hours or high 3-4 hours until tender.
7. 15 minutes before serving, sprinkle toasted walnuts and pomegranate seeds over chicken.
8. Garnish with fresh parsley or cilantro and serve over rice, couscous, or roasted vegetables.
Notes
Use chicken thighs for tender, juicy results. White meat requires less cooking time.
Adjust spices to taste or add chili for heat.
Substitute pumpkin seeds for walnuts for nut-free variation.
