Ingredients
Cheese tortellini (fresh or frozen)
Chicken breast, diced or shredded
Olive oil
Garlic, minced
Onion, chopped
Spinach or baby kale
Heavy cream
Chicken broth
Grated Parmesan cheese
Salt and black pepper
Optional: Italian seasoning, red pepper flakes
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until fully cooked. Remove and set aside.
2. In the same skillet, sauté garlic and onion until fragrant. Add spinach or kale and cook until wilted.
3. Pour in chicken broth and heavy cream. Stir in Parmesan cheese and season with salt, black pepper, and optional Italian seasoning. Simmer until slightly thickened.
4. In a separate pot, cook tortellini according to package instructions. Drain and add to the skillet with the sauce and vegetables.
5. Return cooked chicken to the skillet and toss everything together until well coated. Serve immediately, garnished with extra Parmesan if desired.
