Hearty chicken stew with tender chicken, vegetables, and aromatic herbs in a comforting, flavorful broth.
Ingredients
1 ½ pounds boneless, skinless chicken thighs
2 tablespoons olive oil
1 onion chopped
3 cloves garlic minced
3 carrots sliced
2 celery stalks sliced
2 potatoes diced
4 cups chicken broth
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 tablespoons fresh parsley
Instructions
1. Brown chicken in olive oil
2. Sauté onion, garlic, carrots, and celery
3. Add potatoes, herbs, salt, and pepper
4. Return chicken to pot and add broth
5. Bring to boil and then simmer 25–30 minutes
6. Adjust seasoning
7. Stir in parsley before serving
8. Serve hot
Notes
Use bone-in chicken for more flavor
Add peas or green beans if desired
Thicken with cornstarch if preferred
