Description
Chicken quesadillas are crispy tortillas filled with seasoned chicken and melted cheese. A quick and easy meal for lunch or dinner.
Ingredients
2 cups cooked chicken breast, shredded
1 tablespoon olive oil
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cumin
Salt to taste
Black pepper to taste
2 cups shredded mozzarella or cheddar cheese
4 large flour tortillas
Butter or oil for cooking
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add chicken and seasonings, cook until heated.
3. Remove chicken and set aside.
4. Place tortilla in skillet.
5. Sprinkle cheese over half the tortilla.
6. Add chicken and more cheese.
7. Fold tortilla and cook until golden.
8. Flip and cook until cheese melts.
9. Slice and serve.
Notes
Use rotisserie chicken to save time.
Cook on medium heat for best texture.
Serve immediately for maximum crispness.
