Description
Hearty Chicken Posole Stew with tender chicken, hominy, and a rich chili broth. Perfect for family dinners, game nights, or cozy evenings, this traditional Mexican stew is flavorful, filling, and easy to prepare.
Ingredients
1 tablespoon olive oil
1 pound (450g) boneless, skinless chicken thighs, cut into chunks
1 medium onion, chopped
3 garlic cloves, minced
4 cups chicken broth
1 can (15 oz / 425g) hominy, drained and rinsed
2 cups diced tomatoes (canned or fresh)
2 teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon dried oregano
Salt and pepper to taste
1–2 dried guajillo or ancho chilies, rehydrated and blended (optional)
Fresh cilantro, chopped, for garnish
Lime wedges for serving
Sliced radishes, diced avocado, or tortilla chips for topping (optional)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chicken pieces and cook until lightly browned on all sides. Remove and set aside.
3. In the same pot, sauté onion until translucent, about 3–4 minutes.
4. Add garlic and cook for 1 minute until fragrant.
5. Stir in chili powder, smoked paprika, cumin, oregano, salt, and pepper. Cook for 1 minute.
6. Add chicken broth, diced tomatoes, and hominy. Stir to combine.
7. Return the chicken to the pot and bring the stew to a simmer.
8. Reduce heat and simmer for 25–30 minutes until chicken is cooked through and flavors meld.
9. If using blended chilies, stir them in during the last 10 minutes of cooking for richer flavor.
10. Taste and adjust seasoning as needed.
11. Serve hot, garnished with fresh cilantro, lime wedges, and optional toppings like radishes, avocado, or tortilla chips.
Notes
For spicier stew, add extra chili powder or diced jalapeños.
Use chicken breasts if you prefer leaner meat; adjust cooking time accordingly.
Add black beans or corn for extra texture and nutrition.
Make a vegetarian version by omitting chicken and adding extra beans and vegetables.
Freeze leftovers in individual portions for a quick, hearty meal later.
