Ingredients
4 boneless skinless chicken breasts
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons olive oil
3 tablespoons unsalted butter
3 cloves garlic, minced
3/4 cup chicken broth
1/4 cup fresh lemon juice
2 tablespoons capers, drained
2 tablespoons fresh parsley, chopped
Instructions
1. Slice chicken into thin cutlets.
2. Dredge in seasoned flour.
3. Sear chicken until golden and cooked through.
4. Cook garlic in butter.
5. Add broth and lemon juice and simmer.
6. Return chicken to skillet and spoon sauce over.
7. Garnish with parsley and serve.
Notes
Use freshly squeezed lemon juice.
Do not overcrowd the pan.
