Description
A warm, comforting Chicken Parmesan Soup with tender chicken, rich tomato broth, and melted Parmesan and mozzarella cheese.
Ingredients
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
4 cups low-sodium chicken broth
1 can (14 oz) crushed tomatoes
2 cups cooked chicken, shredded
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Salt and black pepper, to taste
2 cups cooked pasta (optional)
Fresh basil or parsley for garnish
Instructions
1. Heat olive oil in a large pot, sauté onion, garlic, carrots, and celery until tender.
2. Add oregano, basil, and red pepper flakes, cook 1 minute until fragrant.
3. Pour in chicken broth and crushed tomatoes, bring to a simmer.
4. Add shredded chicken, simmer 10 minutes.
5. Stir in Parmesan and half of the mozzarella until melted.
6. Season with salt and black pepper.
7. Add cooked pasta if desired and heat through.
8. Serve warm, garnished with remaining mozzarella and fresh herbs.
Notes
Use rotisserie chicken for a quick version.
Swap pasta for zucchini noodles for a low-carb option.
Add cream for a richer texture.
Top each bowl with extra Parmesan or fresh mozzarella.
