Description
Comforting homemade chicken noodle soup with tender chicken, fresh vegetables, and flavorful broth.
Ingredients
2 tablespoons olive oil
1 medium onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
8 cups chicken broth
2 cups cooked chicken, shredded
2 cups egg noodles
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté 5 minutes.
2. Add garlic and cook 1 minute until fragrant.
3. Pour in chicken broth and bring to a boil.
4. Add shredded chicken, thyme, parsley, salt, and pepper. Simmer 10 minutes.
5. Stir in egg noodles and cook 6–8 minutes until tender.
6. Adjust seasoning as needed and serve hot.
Notes
Use rotisserie chicken for time-saving.
Swap noodles for gluten-free pasta if needed.
Add a squeeze of lemon for extra brightness.
