Ingredients
12 ounces spaghetti or fettuccine
2 tablespoons olive oil
1 pound boneless, skinless chicken breast, diced
Salt and black pepper to taste
3 large eggs
1 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
Fresh parsley for garnish
Instructions
1. Cook pasta and reserve 1/2 cup water.
2. Cook chicken until golden and set aside.
3. Sauté garlic briefly.
4. Whisk eggs and Parmesan.
5. Toss hot pasta with egg mixture, adding water as needed.
6. Stir in chicken and red pepper flakes.
7. Garnish with parsley and serve.
Notes
Use pancetta or turkey bacon for classic flavor.
