Ingredients
1 1/2 lb boneless skinless chicken breast
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups cooked brown rice
1 1/2 cups black beans
1 cup corn kernels
1 cup cherry tomatoes
1 cup shredded lettuce
1/2 cup shredded cheese
Instructions
1. Season chicken and cook in skillet until done.
2. Rest and slice chicken.
3. Divide rice into containers.
4. Add chicken, beans, corn, and tomatoes.
5. Cool completely before adding lettuce and cheese.
6. Store until ready to eat.
Notes
Store cold toppings separately.
Reheat gently.
Adjust seasoning to taste.
Freeze without lettuce or dairy.
