Description
This Chicken Avocado Melt Sandwich is quick, cheesy, and packed with flavor. Juicy chicken, creamy avocado, and melted cheese layered between golden, toasted bread make the ultimate easy lunch or dinner.
Ingredients
2 cooked chicken breasts (sliced or shredded)
1 ripe avocado (sliced)
4 slices sourdough or sandwich bread
4 slices cheddar or provolone cheese
2 tablespoons mayonnaise (or butter)
1 tablespoon Dijon mustard (optional)
Salt and black pepper (to taste)
Fresh spinach or lettuce leaves (optional)
Instructions
1. Heat a skillet or griddle over medium heat.
2. Spread mayonnaise (or butter) on one side of each bread slice.
3. On the unbuttered side of two slices, layer chicken, avocado slices, cheese, and optional spinach. Season lightly with salt and pepper.
4. Spread Dijon mustard on the other two slices, then place on top to form sandwiches.
5. Place sandwiches in the skillet, buttered side down. Cook 3–4 minutes until golden.
6. Flip carefully and cook another 3–4 minutes until cheese melts and bread is crispy.
7. Slice in half and serve hot.
Notes
Use leftover rotisserie chicken for convenience.
Brush avocado slices with lemon juice to prevent browning.
Swap cheddar for mozzarella or Monterey Jack for a gooey melt.
