Ingredients
2 tbsp butter
1 small onion, diced
2 celery stalks, diced
2 carrots, diced
2 cloves garlic, minced
1/2 tsp dried thyme
1/4 tsp black pepper
1/4 tsp salt
4 cups chicken broth
2 cups cooked shredded chicken
1 package (16 oz) potato gnocchi
1 cup heavy cream
1 cup fresh spinach, chopped
Fresh parsley for garnish
Instructions
1. In a large pot, melt butter over medium heat. Sauté onion, celery, and carrots until softened, about 5 minutes.
2. Add garlic, thyme, salt, and pepper; cook 1 minute until fragrant.
3. Pour in chicken broth and bring to a simmer.
4. Add gnocchi and cook according to package instructions until tender.
5. Stir in cooked shredded chicken and heavy cream. Heat through but do not boil.
6. Add chopped spinach and cook 1–2 minutes until wilted.
7. Garnish with fresh parsley and serve warm.
Notes
– For a lighter version, substitute half-and-half or milk for heavy cream.
