Sweet Cherry Pie Cookies with buttery crust and fruity filling.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cherry preserves
Optional: powdered sugar for dusting
Instructions
1. Preheat oven to 350°F.
2. Cream butter and sugar.
3. Beat in egg and vanilla.
4. Mix dry ingredients.
5. Combine wet and dry ingredients into dough.
6. Scoop dough onto baking sheet.
7. Make indentation and fill with cherry preserves.
8. Bake 12–15 minutes.
9. Cool on wire rack.
10. Dust with powdered sugar if desired.
Notes
Use fresh cherry jam if desired.
Chill dough to prevent spreading.
Freeze baked cookies for later.
Drizzle with chocolate for extra flair.
