Description
These Cherry Crumble Bars feature a buttery, crumbly crust, tart-sweet cherry filling, and a golden crumb topping. They are perfect for summer gatherings, afternoon snacks, or cozy desserts at home.
Ingredients
2 ½ cups all-purpose flour
1 cup granulated sugar
½ teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, cold and cubed
1 teaspoon vanilla extract
4 cups pitted cherries (fresh or frozen)
½ cup brown sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
½ teaspoon almond extract (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, mix flour, granulated sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in vanilla extract. Press 2/3 of mixture into pan to form base.
3. In a medium bowl, combine cherries, brown sugar, cornstarch, lemon juice, and almond extract. Mix gently and spread over crust.
4. Sprinkle remaining crumb mixture evenly over cherries.
5. Bake for 40–45 minutes until top is golden and filling bubbles. Cool completely.
6. Lift bars using parchment edges and cut into squares or rectangles. Serve and enjoy.
Notes
Use frozen cherries if fresh are unavailable; thaw and drain before use.
Add chopped nuts for extra crunch.
Chill bars 30 minutes for clean slicing.
Bars store well in airtight containers at room temperature or in the fridge.
