Ingredients
2 pounds potatoes, cut into 1-inch cubes
2 cups shredded cheddar cheese
1 cup sour cream
1/3 cup mayonnaise
1 packet ranch seasoning mix
2 tablespoons melted butter
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper, to taste
Chopped parsley or green onions, for garnish
Instructions
1. Preheat oven to 400°F (200°C). Grease a medium casserole dish.
2. Rinse and dry potato cubes. Place potatoes in a large bowl.
3. In a separate bowl, whisk sour cream, mayonnaise, melted butter, ranch seasoning, garlic powder, onion powder, salt, and black pepper until smooth.
4. Pour ranch mixture over potatoes and stir until every piece coats evenly.
5. Fold in half of the shredded cheddar cheese.
6. Spread potatoes into the prepared casserole dish and cover with foil.
7. Bake covered for 35 minutes, then remove foil and top with remaining cheese.
8. Bake uncovered 10-15 minutes until potatoes soften and the cheese melts and browns slightly.
9. Garnish with chopped parsley or green onions and serve warm.
