Description

Creamy cheesy asparagus casserole baked until golden with a crunchy topping. An easy spring side dish perfect for family dinners or holiday meals.


Ingredients

1 1/2 pounds asparagus trimmed and cut into pieces

2 tablespoons butter

2 tablespoons flour

1 cup milk

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 cup breadcrumbs

2 tablespoons Parmesan cheese

1 tablespoon olive oil


Instructions

1. Preheat oven to 375°F and grease a baking dish

2. Blanch asparagus in boiling water for 2 to 3 minutes

3. Drain asparagus and set aside

4. Melt butter in saucepan and stir in flour

5. Whisk in milk and cook until thickened

6. Stir in cheeses and seasonings until smooth

7. Place asparagus in baking dish

8. Pour cheese sauce over asparagus

9. Mix breadcrumbs Parmesan and olive oil

10. Sprinkle topping over casserole

11. Bake 20 to 25 minutes until golden

Notes

Use fresh asparagus for best flavor
